Do you love toast but you’re bored of your daily jam-and-butter routine. Or maybe you want to focus on having a healthier start? Here’s some suggestions that will get your taste buds tingling and your energy buzzing all morning! There’s five to choose from, and they’re quick to do, so you could have one for every day of the working week.
Banana and Nut Butter
Spread a tablespoon of nut butter of your choice (almond, cashew or peanut) on wholegrain toast and top with slices of banana and a sprinkling of cinnamon.
Tomato and Avocado
Mash an avocado and spread thickly onto brown sourdough toast. Top with slices of ripe tomato and freshly ground pepper.
Poached Egg and Wilted Spinach
Into a pan of boiling water, gently break an egg and simmer for 3 to 3 and a half minutes (or until the desired consistency). Meanwhile, sauté a large handful of spinach in a small splash of olive oil until wilted. Pop the spinach on a thick slice of buttered, toasted granary bread. Top with the spinach, then the egg, then season to taste.
Smoked Salmon and Scrambled Egg
Break 2 eggs into a pan and scramble, preferably using olive oil, until the desired consistency. Place on buttered wholegrain toast, then top with thin slices of smoked salmon. Grind on black pepper to taste.
Hummus and Mixed Seeds
Spread two tablespoons of hummus onto a thick slice of toasted sourdough bread. Add a sprinkling of seeds of your choice.
