Simple Solutions for Shrove Tuesday – No Need to Pancake!
It’s Pancake Day! Yay! We can eat those little beauties all day if we want! Breakfast, lunch and dinner! And even for dessert if you fancy. Lemon and sugar are traditional, but here’s a couple of alternative topping ideas for those who like sweet, or those who prefer savoury!
Savoury Mushroom and Tomato Cream Topping
Serves 2
Ingredients
2 tbsp vegetable oil
250g button mushrooms
250g cherry tomatoes, halved
2 tbsp soya cream
2 tbsp pine nuts
Chopped chives
Two ready-made pancakes
Method
Heat the oil in a frying pan.
Cook the mushrooms until tender, add the tomatoes and cook for another 2 minutes.
Pour in the soya cream and pine nuts, then gently cook until combined.
Put each pancake on a plate, then spoon over the tomatoes and mushrooms on one half and roll the other side over.
Scatter with chives.
Banana, Peanut Butter and Choc Chip
Serves 2
Ingredients
3 tbsp smooth peanut butter
1 tbsp icing sugar
1 tbsp milk
25g chocolate chip
½ banana, sliced
1 tbsp chopped peanuts
2 pancakes
Method
Mix the peanut butter with the icing sugar, milk and chocolate chips.
Put each pancake on a plate, then spread the mix over each one.
Top with the banana.
Roll up and sprinkle with a few chopped peanuts.
