Sometimes it’s difficult to know what to have for breakfast, especially on a weekday when you’re usually rushing out of the door. Cereal doesn’t always cut it, cooked breakfasts – though undoubtedly delicious – can be unhealthy, and porridge takes precious time that you haven’t got.
This overnight chia pudding might be just want you are looking for. Rich in protein and omega-3s, it tastes delicious, and it’s prepared the night before, it’s simply a case of eating it in the morning. Or if you don’t have time for that, take it with you. You can always eat it at your desk later. Everyone will be jealous at how pretty it looks!
And if you need another reason to eat this tantalising breakfast, chia seeds are a fabulous source of fibre, protein, essential fatty acids, vitamins, minerals and antioxidants!

Ingredients
- 300 ml coconut almond milk
- 60 g CoYo Coconut Yogurt
- 65 g chia seeds
- 2 passionfruit
- 1 fresh fig
To Garnish
- Strawberries and kiwi
Instructions
- Place the chia seeds, coconut yogurt and almond coconut milk in a bowl and whisk.
- Squeeze the pulp from the passionfruit and divide between 4 small jam jars.
- Slice one of the figs and place the rounds in the jars.
- Divide the mixture between the jars.
- Place the lid on the jars and refrigerate.
- Chop the fruit. If you’re making the pudding to go, put the fruit in a separate container.
- Leave overnight.
- Top pudding with fruit right before eating.
- Enjoy! (And make your work colleagues jealous!)
